In this workshop, you'll learn the secrets behind harnessing beneficial bacteria to create delicious fermented foods. From tangy sauerkraut to spicy kimchi and beyond, you'll explore a variety of recipes and techniques that not only preserve the freshness of foods but also enrich them with probiotics and enzymes that support gut health. What do you need? A cutting board, knife and a jar for your fermented veggies!

Giulia's Agricultural Odyssey: A Tale of Fermentation and Syntropic Agroforestry

Giulia's journey began in the enchanting village nestled within the Lessinia Park, surrounded by the majestic mountains of Italy's countryside near Verona. Her formative years in this idyllic paradise laid the groundwork for a lifelong passion for nature and agriculture.

After pursuing furniture design at the university, Giulia's interests evolved, leading her to specialize in garden design. The realization that her true calling lay in farming prompted her to embark on a transformative journey. Giulia pursued a practical experience program (PDC) in Terra Alta, close to Sintra, and immersed herself in the study of regenerative agricultures upon returning to Italy.

Fueling her passion for sustainable agriculture, Giulia cultivated her own garden and contributed to a medicinal plants farm. Five years ago, her foray into fermentation began with the alchemical processes of kombucha and sourdough, later expanding into the realms of kimchi and lactofermented vegetables.

A significant chapter unfolded last year when Giulia traveled to Brazil to study and volunteer in syntropic agroforestry. There, amidst the vibrant landscapes, she delved into the intricacies of ecosystems and began experimenting with fruit sodas, beverages, and vinegars.

Giulia's passion finds its roots in the ancient method of fermentation, which she perceives as an organic connection to the cycles of nature based on biodiversity and balance. This belief propels her commitment to making ecosystems stronger through sustainable practices.

As Giulia continues her agricultural odyssey, she remains dedicated to the timeless art of preservation, harmonizing ancient wisdom with modern understanding to create a more resilient and balanced world.
